Joe Don Jackson is a former race car that competed in the Piston Cup Racing Series during the 1950s. He raced with the number 7 and was sponsored by Po'Tater's Garage & Gas and Southern Special.

In Cars 3, Joe Don Jackson is one of the several racers that appear in the archived 1954 recording at Fireball Beach. He was one of the many competitors the Hudson Hornet passed on track for the lead. Their race would be cut short as the Hudson Hornet would wreck out during the event.
Physical description[]
Joe Don Jackson's model is unknown, but it bears some resemblance to Jimmy Lugwrench. Jackson sports a maroon livery with gray sponsor text and number 7 that has a black outline. He also has a black roof.
